Whether its birthday, anniversary or a happening weekend, earlier it was a trend to visit, hotels or roadside food joints to celebrate any special occasion, but with the passage of time, people’s preference has been changed a lot. Now people prefer to eat at home by cooking their favorite food in an innovative and healthy way. Sometimes they cook in a group to enjoy their weekend, or of its couple, they both cook together to ease out each other workloads or sometimes spouse ( here, husband) cooks for her beloved wife to surprise her.

And according to the Godrej Food Trends Report 2018 Contest this trend is changing at a faster pace. More and more people are now switching to home cooked food as everyone wants to eat healthier, and moreover, nowadays it has become easier to cook anything at home because the ingredients are easily available. Lots of travel-related food being cooked – World food, as well as local regional cuisines and ingredients for all the dishes, can be found easily now

We always prefer to cook at home because we can make the dish in a unique way by using the different type of spices, recipe and we can present in a way we want it too, and when it comes to me I always try to make new and innovative dishes, because in this way I can make new and innovative dishes. I can add my ‘touch’ to the dish by using the different type of spices and can present in a way that I want

And today I am sharing one of my favorite cuisine from the city of Kolkata. Popularly known as the city of joy and cultural capital of India. Kolkata is famous for food which is a mix of spicy, tangy and sweet. I am going to share the recipe of CLUB KACHORI which we can make for our breakfast.

I choose this particular recipe because of its traditional way of cooking! Whenever I make this dish for my family I prepare it in a sand bowl ( in case if I don’t get the sand bowl, I use sand clay diya )and cover it with banana leaf, that will add a different type of fragrance to it, making it a lot more palatable. And moreover it’s my kiddos all-time favorite dish, so in a month I generally make it twice for them.

So let’s have a quick look at the ingredients and the method to prepare this recipe

Ingredients –

For Gravy

SEASONING

Oil- 2-3 tsp
Bay leaves ( Tej patta ) – 2-3 pc
black seeds( Kala jeera )- 1 tsp
Fennel seeds ( saunf) – 1 tsp
Asefoetida ( hing) – one pinch
Red chilli – 2-3 pieces

Tomato – 3 pc ( finally chopped )
Pumpkin – 250 gm kg ( chopped into small pieces )
Potato – 1/2 kg (chopped into small pieces)
Red chili powder – 1 tsp ( according to taste )
Turmeric powder – 1/2 tsp
coriander powder – 3 Tsp
Cumin powder – 1 Tsp
Black salt – 1/2 Tsp
Black pepper – 1/2 tsp ( according to taste)
Dried mango powder – 1 Tsp
Garam masala – 1 1/2 tsp
Salt – according to taste
water

Method:-
Heat oil in a big cooker then add all the seasonings then finely chopped tomato, add salt and saute them for some time. After that add pumpkin pieces and let them cook for some time by covering the vessel with something ( for ex.stell plate ) Add potato and all dry masala and mix it nicely then add water and cover it and cook it for less than one whistle in cooker. Turn off the flame and let it cool. When the pressure is released open the lid, put 3-4 diya and cover it with banana leaf for sometime

For Kachori (Dough )

Split Gram ( Urad Dal) – 1 cup ( Soak it for more than 2 hours then make a thick paste of it )
Semoloni ( Suji ) – 1 cup
Wheat flour ( Maida ) – 1/2 kg
Salt – According to taste
Oil – 1-2 tsp
Asafoetida – 1 pinch

Method :-

Mix all the ingredients and make a dough ( Remember water will not be added in it, instead of water we will use urad dal paste and the dough will be hard ) ( in case if it’s too hard then you can add little water )

heat oil in a frying pan and then roll it in small size and fry it till light golden brown

So in this way, we can enjoy eating hotel like food right at our home ! you can try making it in a different way always, to tantalize your dear ones taste buds and thus bringing a smile on their face.
