Gravy Wala Karela (bitter gourd)
Bitter Gourd ½ Kg
Paneer 100 gm
Khoya 50 gm
Oil For Frying
Black Pepper 2 tbsp
Tomato 150 gm
Paneer 50 gm
Curd 2 Tbsp
Cumin seeds 2 Tsp
Kasuri Methi 1 Tsp
Kashmiri Mirch 1 Tsp
Asafoetida 1 Pinch
Red Chilli Powder 2 Tsp
Garam Masala 1 Tsp
Coriander Powder 2 Tsp
Green Chilli Paste
Salt As per your taste
Wash the bitter gourd and peel off the outer skin with the help of a knife. Cut it in the middle and remove the seeds properly. Boil water in a utensil and put bitter gourd in it. Make sure to cook bitter gourd on a low flame, without covering the utensil.
After five minutes, check that bitter gourd are cooked properly or not. When cooked take them out and put them in a strainer to drain off the excess water so they don’t seem watery while eating.
If during making the recipe you feel there is more water in bitter gourd then you can press them in between your palm gently to remove the water.
Now, warm oil in a pan and put bitter gourd in it and fry them on a low flame until golden brown. When fried take them out of the pan and place them on a tissue paper to drain out the excess oil. If you don’t want to fry bitter gourd, then you can shallow fry them in a non-stick utensil. Let there be any of the above processes, there will not be a change in the taste of the recipe.
Mix Paneer and Khoya in a bowl, add salt and black pepper to it and mix it properly. Fill this mixture in the bitter gourd and put them in a plate.
Blend tomato, curd, paneer, khoya in Maharaja whiteline joy turbo mixer grinder. Put a pan on the flame and put 2 Tbsp oil in it. When it is warm, add cumin seeds, asafoetida, Kashmiri Mirch powder, Coriander powder and roast them well. Then add ginger-garlic paste and green chilli paste and stir to cook it well. Then add the blended gravy and cook it for 10-15 minutes on a low flame.
Once the mixture starts leaving oil, add garam masala to it. Then add water as per the consistency you want for your gravy. Add salt and let it boil for 5 minutes. Then Add the bitter gourds one by one, cover the pan and cook for 10 minutes on a low flame so that they absorb the gravy.
Take out the dish in a large bowl, add 1 tbsp cream to it and garnish it with green coriander and dry fruits.
Serve it hot with Puri, Paratha or Naan.
Note: Garam Masala should not be cooked for more time as it lowers down their taste as well as aroma.
The best part is we can easily clean the Mixer Grinder with the help of liquid wash, thus I can save my time to do other household chores.
