Summer – The season of ice-cream, cold drinks, summer vacations and endless fun! But this season is not everyone’s favorite and I am one of those few people! I somewhat dislike this season, all because of the way Sunshower his extra love upon us, in the form of scorching heat :p.
Nevertheless, Summer is the season of fruits as well! A season of mangoes, watermelon, grapes, and oranges. People love to drink mango juice and also a sugarcane juice which people call nectar of earth. People love to eat or drink something chilled during this time, as it freshens up their mind and what could be more better than ‘Dessert’! How about a dessert that comprises of different types of fruits with custard sauce and fresh cream? Being healthy in nature it can be consumed by everyone! And with kid’s vacations going to start ( yes in my city summer vacation start from the last week of June ), being a mother, it’s a sort of duty to take care of them especially when it comes to food.
I always prefer to treat my kids with something special during vacations, so as to see the million dollar smile on their face . Hence I am sharing one of my all-time favorite summer dessert recipe, which I generally make for my kids!
Rasgolla Fruit Pudding
INGREDIENTS:-
Rasgolla – 5 pc (Cut in half pc by squeezing it little)
Mango – 2 pieces (Chopped in small pieces)
Apple – 2 piece (Chopped in small pieces)
Banana – 2 piece (Chopped in small pieces)
Pomegranate – 2 piece
Marie Biscuit -5 pieces (finely crushed)
Amul Fresh Cream (whipped) – 400 gm
(Mix 100 gm of powder sugar in cream, stir it and make sure that there are no sugar lumps and keep it in the freezer for half an hour. Ensure that cream is thick)
For Custard Sauce –
Custard Powder – 6 tsp (mix in cold milk )
Milk – 1/2 litre
Sugar – 100 gm
Heat milk in a pan. When it starts boiling add custard powder, Keep stirring for 15-20 minutes to let it mix properly. When it starts getting thick, add sugar to the pan & let it dissolve in milk. When the sugar gets dissolved completely, switch off the gas and let it cool.
Method :-
Now, Take a big glass bowl to set all this.
First spread a layer of custard sauce , followed by Amul sweet cream. Arrange the rasgolla on it! Repeat the process then add all the fruits (Mix all the fruits in a bowl and then add). Finally cover it with Amul cream. Spread crushed Marie biscuit on the top and decorate with pomegranate and cherry (if available). Serve it chilled to your kids and dear ones!

This is a yummy dessert. I have tried a similar variation at my place with rasgollas, cream, custard and dry fruits.
